Whats Cookin 8

CrockPot Bean Soup
From: Laura Humphrey

This could technically be considered vegan as well, but could easily be modified by adding chicken, or ground turkey.


1 onion chopped
2 carrots thinly sliced
2 stalks of celery
2-3 potatoes diced
1 can diced tomatoes
5-6 radishes thinly sliced
1 fennel thinly sliced
1 bell pepper diced
1/2 bag of white beans
2 tsp. Chili powder
1 tsp. Cumin
1/2 tsp. Oregano
1/2 tsp. chopped garlic
3 cups Vegetable stock
salt and pepper to taste

Toss all of that in a crockpot and let cook over night on high.

Whats Cookin 7

Ramon Noodle Crunch with Chicken

Salad:
1 pkg. Coleslaw mix (in produce section) 16 oz.
1 bunch green onions, chopped
1 pkg. Salted sunflower kernels (3.75 oz.)
2 pkg. Ramen Noodles – Oriental Flavor

Crunch noodles in the package they come in. Put all ingredients, except seasoning packets from noodles, in a large bowl and mix.

Dressing:
¾ cup vegetable oil
⅓ cup sugar
½ cup white vinegar
2 seasoning packets from the noodles

Stir all ingredients in a bowl and pour over salad just prior to serving. Save a little of the dressing for the chicken.

Chicken:
Use chicken breast tenderloins and place in a skillet with some olive oil. Season with a little of whatever spice you like (I use Tony Chacere's). Then baste the chicken with the remaining dressing and pour it into the skillet with the chicken. Once cooked take out to cool and cut into chunks to serve in salad.

Calling All Moms

OKAY! Im so glad that eveyone is joining and I hope your finding some recipes that your whole family enjoys but Im out of emails!! I have a few more days worth of recipes saved up so THANKYOU to everyone who sent some in... plus I steal some from babyfit.com ... ANYWAY. If you like the idea then please do spread the word around blogland since the more of us moms that are in on this the better it will be! Im going to go check out my recipe box for some more of my own that I can add. which made me just remember a GREAT one that my kids LOVE. beware its not the healthiest but they sure eat it all up! It wont be on until next week though since I think Ihave posts done up until the 20th already. Take it easy :)

Whats Cookin 6

Lemon-Soy Chicken with Rice
From: Hannah Levin

1 T oil
2 cloves garlic (crushed or minced)
3-4 chicken breasts (1-inch pieces)
1/4 C soy sauce
1/4 C lemon juice
1/2-1 C water (depending how flavourful you like it)
1 T cornstarch (mixed with a little cold water) (optional)

Heat oil over medium heat and brown garlic. Add chicken and cook until almost done. Add soy sauce, lemon, and water and simmer until chicken is cooked. Add cornstarch mixture to thicken or leave sauce runny.
Serve over rice.
You can also add soy/lemon/water earlier for flavour to soak into chicken better.

Whats Cookin 5

Curry
From: Susie Sams

Can be made with 1-2lbs of any of these meats (chicken, lamb, beef, fish, prawns) or if you want a vege meal, use potatoes or lentils perhaps. I usually use less meat than this – we are skimpy meat eaters.
2-3 cloves garlic, minced
1 tomato, diced (canned whole/chopped tomato works fine as well)
½ t coriander
½ t cumin seeds (or powder)
½ t mustard seeds
1-2 t curry powder (any heat)
Or
1 t tumeric
2 t garam masala (an Indian spice)
Salt and pepper to taste
1 onion, diced
2 T oil
1 can coconut milk
Or
chicken, beef, etc broth

Heat oil and add onions, tomatoes, and garlic. When onion is transparent add cumin and mustard. Let stand on heat for 1 ½ minutes. Add meat or vege and stir to mix all contents. Let sit for 1 min. Add curry powder or mix and stir to coat. Add coconut milk or broth and simmer for ½ hour on low heat.

Serves great over rice or with roti (just like a tortilla) if you want the cultural experience.

Whats Cookin 4

Pizza Casserole

1 lb. ground beef, browned
1 box shells and cheese,
prepared 1 cup pizza or spaghetti sauce
Pizza toppings such as pepperoni, mushrooms, green peppers
Shredded cheese

Preheat oven to 350. combine ground beef and sauce until warm. Layer a 2 qt casserole dish starting with shells and cheese, then pizza toppings of choice, then beef and sauce mixture. Sprinkle shredded cheese on top.

Bake for 15-20 minutes or until cheese is melted

Whats Cookin 3

Sticky Chicken

I love this recipe because it’s so flexible. I’ve done it with chicken pieces as well as a whole chicken. If you’re wanting a slow roast chicken you can cut out the backbone of the chicken and lay it as flat as you can, then baste it with the sauce as it’s cooking. I love doing a 3-4lb chicken for 2-3 hours in the oven at a low temp – 150C for me, uh… 325F? My Internet is down at the moment, or I’d look it up.

Chicken
Ketchup
Brown sugar
Vinegar
Soy sauce
Onion
Ginger
Garlic


Etc. So the idea is a want a sweet, tangy sauce. I usually mix it in a sauce pan or frying pan to start with – get the onion cooked down. Then you add the sauce parts until you like the taste. Baste the chicken, or if it’s pieces, just plop the pieces in the sauce and turn them every 20-30 min. I’m not a “rules follower” cook. I tend to do whatever works for me at the time. Hope that’s okay for what you’re after! This is so yummy over rice and with a vege on the side.

Goodies!

Vegan Peanut Butter Cookies

Spelt flour bakes into a slightly darker cookie, whole wheat pastry flour is slightly blonder - more traditional in appearance in the end. Finish the cookies with chopped nuts or a sprinkling of flaky salt. I'd also recommend seeking out a peanut butter that is well combined, and not super-oily (extra slick) looking - to avoid problems with the cookie batter.

2 cups whole wheat pastry flour, spelt flour, or unbleached all-purpose flour
1 teaspoon baking soda
3/4 teaspoon fine grain sea salt
1 cup organic,chunky natural peanut butter
1 cup maple syrup OR 1 cup sugar1/3 cup extra virgin olive oil
1 1/2 teaspoons vanilla extract

Preheat oven to 350F degrees.
In a medium mixing bowl combine the flour, baking soda, and salt. In a separate larger bowl combine the peanut butter, maple syrup, olive oil, and vanilla. Stir until combined. Pour the flour mixture over the peanut butter mixture and stir until combined. Drop by heaping tablespoonfuls onto baking sheets. Press down on each one gently with the back of a fork. Bake for 10, maybe 11 minutes - but don't over bake or they will be dry. Let cool five minutes and transfer to a cooling rack.Make 2 - 3 dozen cookies

Whats Cookin 2

I honestly havent tried this one before but it sounded like a good alternative to using beef and my kids love Chili so I guess we'll see how this one goes over!

15 Minute Chili
taken from http://www.babyfit.com/ recipes

1 pound ground turkey
1/2 cup chopped onion
1 16 oz. can pinto beans, drained and rinsed
1 16 oz. can kidney beans, drained and rinsed
1 28 oz. can chopped stewed tomatoes
1 tablespoon chili powder
1 tablespoon cumin powder
1/2 cup salsa1.

In a large pot, brown turkey with chopped onion.2. Add beans, tomatoes, garlic, chili powder, cumin, and salsa to turkey mixture. Cook until hot.

Serve with cornbread, cooked pasta, cooked rice, or on top of a baked potato. Sprinkle with cheese if desired.

Makes 4 servings.

Whats Cooking 1

So todays meal... and as many as I need to come up with until I start seeing other ladies recipes flow in will be courtesy of yours truly . No it isnt going to be anything fancy or hard...Its simple easy everyday food and this is just a way for you to have some new supper ideas ! What is cooking for supper today?

Spicy Salmon with Asparagus and Rice

you'll need :

As many boneless Salmon Fillets as you need for your family
flour
pepper
Cajun spice
olive oil
milk
margarine
asparagus
hollandaise sauce mix
your choice of rice. I know I always go the easy way out with Minute Rice

In a bowl combine approx 1 cup of Flour 1/2 tsp Pepper and 3 tbsp of Cajun Spice
I lightly coat the salmon in olive oil and then just dip in the flour mixture
You can bake this in the oven or fry in butter. which is not good for you but tastes oh so much better! Bake or Fry until it flakes apart easily. I'm not sure on a time. The frying is quick... baking I just keep checking on it.

Steam your asparagus and make the Hollandaise sauce according to package directions. Drizzle over the asparagus once it is on your plate

And Rice. I think I can leave that up to you!
