Ramon Noodle Crunch with Chicken

Salad:
1 pkg. Coleslaw mix (in produce section) 16 oz.
1 bunch green onions, chopped
1 pkg. Salted sunflower kernels (3.75 oz.)
2 pkg. Ramen Noodles – Oriental Flavor
Crunch noodles in the package they come in. Put all ingredients, except seasoning packets from noodles, in a large bowl and mix.
Dressing:
¾ cup vegetable oil
⅓ cup sugar
½ cup white vinegar
2 seasoning packets from the noodles
Stir all ingredients in a bowl and pour over salad just prior to serving. Save a little of the dressing for the chicken.
Chicken:
Use chicken breast tenderloins and place in a skillet with some olive oil. Season with a little of whatever spice you like (I use Tony Chacere's). Then baste the chicken with the remaining dressing and pour it into the skillet with the chicken. Once cooked take out to cool and cut into chunks to serve in salad.

So you don't cook the noodles?
ReplyDeleteNope. Don't cook the noodles. They will get soft when you pour the dressing over it.
