Lemon-Soy Chicken with Rice

1 T oil
2 cloves garlic (crushed or minced)
3-4 chicken breasts (1-inch pieces)
1/4 C soy sauce
1/4 C lemon juice
1/2-1 C water (depending how flavourful you like it)
1 T cornstarch (mixed with a little cold water) (optional)
Heat oil over medium heat and brown garlic. Add chicken and cook until almost done. Add soy sauce, lemon, and water and simmer until chicken is cooked. Add cornstarch mixture to thicken or leave sauce runny.
Serve over rice.
You can also add soy/lemon/water earlier for flavour to soak into chicken better.
